To make this daisy cookie you'll need royal icing,
sparkling sugar, gel food coloring, and unsweetened chocolate.

Start by using a sturdy cookie
dough that won't spread. I used
our No Fail Sugar Cookie recipe. Remember that you can
make cookies ahead of time and
freeze them until you're ready
to decorate.

Make a batch of royal icing
and divide it into three
portions. One can be
quite small because it will
be used only for the center
of the cookie.

Color your first two portions
with desired color. One will be
used in a pastry bag and the other
will be used as your flow icing. I
like to put my flow icing into
plastic squeeze bottles for easier
application.

Put a fifty cent piece sized
squirt
of royal icing on the center of the
cookie and use a paint brush or the brush end of your trip cleaning brush to paint the
cookie to the edges. |

Allow the cookie to dry
for a few minutes then
pipe an edge around it
to add some dimension
to your cookie.

Add sparkling sugar to create
a beautiful daisy. When I
use sparkling sugar I put
my cookies on a cooling rack
with waxed paper underneath. That way the excess sugar can
be recycled.

I then used my pastry
bag to add a few more lines
to the cookie.

To create the center of the cookie. I took my third portion of icing and added a
small amount of melted unsweetened chocolate to it. Then, I added just a little
black food coloring. I piped the center dots on with a #2 tip
